Accessory (A/C, alternator, etc.) brackets bolt to the heads...remove them too. Loosen the rocker-arm bolts; remove them and pushrods. Loosen and remove 10-headbolts from each head. Take heads off.

I think FMS makes a shorty stainless header to use the GT40P heads in a mustang. Years ago I used the FMS headers on my 95 Cobra with the stock GT40 heads, and they fit pretty well and seemed to be good quality.
