Which valve to use?

These are 1.89 and 1.69 valves. One set is stainless one piece valves, 11793epn, 11792epn
The other set is combo of chevy valves 1.89 and seal power exhaust 1.59.
I know which one I want to use. but what is better?? I have had these for a couple of years now in a box.
I have the keepers for them also.
I know the head will have to be cut, Got a guy to do that.

the undercut valve stems will probably flow better. definately do not mix match with the uncut valve stems. like joe said boport can give more advice on this.lol

I have two heads now, I may send one to boport and see what it flows. Is there a flow bench close by that someone has? I was hoping someone would know the #'s off these.
I found the #
